How To Make Banana Oatmeal Muffins
Banana oatmeal muffins are delicious for breakfast, or as a healthy afternoon snack. In this step by step guide Selina Wragg, baker and owner of Wraggamuffins, shows you how to make them.

Ingredients
- 280 g plain flour
- 85 g butter, melted
- 1 baking powder
- 1 tsp bicarbonate of soda
- 120 g sugar
- 2 large eggs
- 250 ml milk
- 1 tsp vanilla extract
- 1 pinch of salt
- 2 small ripe bananas
- 150 g porridge oats
- 1 vegetable oil
Method
Pre-heat the oven to 200 degrees Celsius.
Put the porridge oats into a bowl, then sift in the flour, the bicarbonate of soda and the baking powder. Add the sugar and the salt and mix. Make a well in the centre of the dry ingredients and set aside.
Crack the eggs into a different bowl and whisk. Add the melted butter and 1 tsp of oil.
Peel and mash the bananas with a fork, then mix with the milk. Add the vanilla extract and whisk it into the egg mixture.
Pour the wet ingredients into the well in the dry ingredients and gently mix together until all the ingredients are combined.
Grease a large muffin tin using a kitchen towel and the remaining oil, then dust the tin with flour. Spoon the mixture into the muffin tin, filling them to the top.
Bake for about 20-30 minutes until brown. Check them by inserting a skewer into one of the muffins, when it is cooked the skewer should come out clean.
