Step : You will need

  • 2 vanilla pods
  • 600 g sugar
  • 2 tbsp corn flour
  • 1 tsp salt
  • 6 egg yolks
  • 30 g butter
  • 340 g vanilla wafers
  • 5 bananas
  • 250 ml double cream
  • 2 tbsp caster sugar
  • 700 ml butter milk

Bring the milk and vanilla beans to a simmer in a medium saucepan over low heat. Using tongs, remove the beans from the milk. Using the tip of a small sharp knife, scrape the tiny seeds from each bean back into the milk

Combine the sugar, cornflour and salt in a medium bowl. Separate the eggs, add the egg yolks and whisk well. Gradually stir in about half of the hot milk, then pour the mixture into the saucepan. Cook over medium heat, stirring constantly, until the pudding comes to a full boil. Remove from the heat and stir in the butter until melted. Transfer to a medium bowl. Cover the pudding with a piece of plastic wrap pressed directly onto the surface and pierce a few holes in the wrap with the tip of a knife. Let stand until tepid, about 30 minutes.

Layer the cookies, bananas and pudding into a bowl, ending with the pudding. Cover tightly and refrigerate until chilled, at least 4 hours or overnight.

Whip the cream and caster sugar in a chilled medium bowl until stiff. Spread the whipped cream over the pudding. Serve chilled, spooned into bowls.

    I originally from the Gulf Coast US, and that's not the way to make good banana pudding - it's sad. Here's a good recipe: Ingredients: • 3/4 cup sugar • 2 1/2 tablespoons cornstarch (corn flour to Brits) • 1/4 teaspoon salt • 2 cups milk • 2 tablespoons butter • 1 teaspoon vanilla •-2 bananas chopped • 2 bananas (outer skin preferable black so the contents are well fermented so they have a banana liquor flavor) Directions: 1. Blend sugar, cornstarch, and salt. 2. Add fermented bananas to milk and blend well 3. Gradually add milk/banana blend mixing well then cook and stir until smooth, thickened and clear. 4. Stir in bananas until well combined. 6. Add butter and vanilla then mix well 7. Line bowl with gingersnaps 7. Chill in refrigerator. You can add eggs if you want, but you don't really need them if you use cornstarch. Also try with tapioca for a posh treat.

    In uk this is called banana and custard! The quickest way to make this is to get a tin or packet of ready made custard and add sliced bananas!
