Ingredients

  • 3 bananas
  • 150 g butter
  • 150 g demerara sugar
  • 2 tsp lemon juice
  • 80 g walnuts
  • 2 eggs
  • 300 g self-raising flour
  • 2 vegetable oil
  • 120 g mascarpone cheese
  • 200 g icing sugar

Method

Blend together the sugar and the butter, then add mashed bananas, lemon juice, most of the walnuts, 1 egg and the flour. Start mixing slowly, then speed up until it is blended. Add the second egg and the oil, and mix again.

Pour the mixture into a greased and lined tray, bang the tray on the table to spread the mixture to the corners, then bake at 180 degrees Celsius for about 1 hour. Insert a skewer into the cake, and if it comes out clean, the cake is ready. Let the cake cool for a couple of hours.

Mix a little butter, the mascarpone and the icing sugar in an electric mixer. Spread the frosting over the cake and sprinkle over a few more walnuts.
