Step 1: You will need

  • 4 calamari, cleaned
  • half a cantaloupe melon, cubed
  • 2 tbsp basil, chopped
  • 1 onion, thinly sliced
  • 4 tbsp corn starch
  • 400 ml vegetable oil
  • juice of 1 lemon
  • 5 tbsp olive oil
  • 1 tbsp coriander powder
  • 1 small handful of rocket
  • salt and pepper
  • 1 bowl
  • 1 spoon
  • 1 saucepan
  • 1 slotted spoon
  • 2 trays
  • kitchen paper
  • tongs
  • 1 barbecue, charcoal or gas
  • 1 bottle of water for dousing flames

Step 2: Prepare the barbecue

If you have a charcoal barbecue, light it 30-45 minutes before cooking. It is ready when there are no more flames and the charcoal has turned white.

If you are using a gas barbecue, light it up, turn it to its highest setting and leave it for 15-20 minutes to heat up.

Step 3: Prepare the crispy onion

Dip the onion rings into the corn starch. Separate the rings and make sure they are well covered, then gently shake off any excess starch and place onto a tray.

Step 4: Fry the onion

Put the vegetable oil into the saucepan and place on a medium heat. When the oil is hot add the onion rings. It is important that the oil is not too hot or the onion will burn

Fry the onion for 5 to 7 minutes or until they are light brown and there are very few bubbles. Use the slotted spoon to remove the onion rings and place them on a tray lined with kitchen paper to drain the oil. Season with a little salt.

Step 5: Season the calamari

Spoon half the olive oil over the calamari and sprinkle on the coriander powder. Season with salt and pepper and mix well.

Step 6: Barbecue the calamari

Place the calamari onto the barbecue. Cook for 3 minutes, then turn them over and cook for 3 minutes on the other side. Once cooked remove them from the barbecue and place onto the tray.

Step 7: Make the melon dressing

Take a bowl and add the melon, lemon juice, chopped basil and the remaining olive oil. Mix all the ingredients together.

Step 8: Serve

Place the calamari onto a plate, add a little rocket, spoon on some of melon dressing, top with a few crispy onion rings and serve.
