Step 1: You will need...

  • 4 slices of crusty, firm bread, or Italian bread
  • 150 g button mushrooms, sliced
  • 1 tbsp chopped thyme
  • 1 tbsp chopped parsley
  • 1 large chicken breast, thinly sliced
  • 120 g goat's cheese, sliced
  • a few basil leaves
  • 2 tbsp mayonnaise
  • 80 ml olive oil
  • salt and pepper, to taste
  • 1 barbecue, either charcoal or gas
  • 1 frying pan
  • 1 spoon
  • 1 tray
  • some tongs
  • 1 heavy frying pan
  • 1 brush
  • 1 chopping board
  • 1 knife

Step 2: Fry the mushrooms

To begin, heat the frying pan on a high temperature. When hot, pour in a little more than half of the olive oil and add the mushrooms. Cook the mushrooms, stirring occasionally. When slightly browned, season with salt and pepper. Give them another stir and turn off the heat. Now add the thyme and the parsley and mix again. Finally remove the pan from the stove.

Step 3: Season the chicken

Brush one side of the chicken with olive oil and then season with salt and pepper. Turn the pieces over and repeat on the other side.

Step 4: Season the bread

Coat only one side of each slice with olive oil and season with salt and pepper.

Step 5: Barbecue the chicken

Place the chicken on the barbecue and grill for 2-3 minutes. Turn it over and grill for another 2-3 minutes on the other side. When nicely browned, remove it from the barbecue and return to the kitchen.

Step 6: Put the sandwich together

Turn the bread over so that the seasoned side is facing down and then add a dollop of mayonnaise to each slice and spread. Now, on one side of each sandwich, spoon over the mushrooms. Follow this with the chicken, basil and the goat's cheese. Finally, close the sandwiches up.

Step 7: Barbecue the sandwiches

Place both sandwiches on the barbecue and put the heavy pan on top to press them down. Grill for 2 minutes. Turn the sandwiches, put the pan back on, and grill for a further 2 minutes until brown and crisp.

Step 8: Slice and serve

Cut both sandwiches in half, pop them onto separate plates and serve with a small salad.
