Step 1: You will need…

  • 2 chicken breasts
  • 3 garlic cloves, minced
  • 1 tbsp black pepper
  • 1 tsp turmeric
  • 1 tsp brown sugar
  • 1 bunch of coriander, chopped
  • the juice of 1 lime
  • 2 tsp soy sauce
  • 1 tsp fresh ginger, grated
  • 1 mango, (still a little hard)
  • 2 shallots, sliced
  • 1 coriander
  • 6 basil leaves, sliced
  • 2 tbsp lime juice
  • 1 tbsp brown sugar
  • 1 tbsp fish sauce
  • 1 small red chilli, (optional)
  • 1 cutting board
  • 1 knife
  • 2 bowls
  • 2 spoons
  • 1 pair of tongs
  • 1 peeler
  • 1 barbecue, either charcoal or gas
  • 1 bottle of water for dousing any flames

Step 2: Prepare the barbecue

If you plan to use a charcoal barbecue, light it 30-45 minutes before you cook and wait until the charcoal has turned white and there are no more flames. If you are using an electric barbecue, turn to high and leave for 20 minutes to heat up.

Step 3: Score the chicken

Using the cutting board and a sharp knife, score 5 slits into each chicken breast.

Step 4: Marinate the chicken

In one of the bowls, mix the garlic, black pepper, turmeric, sugar, chopped coriander, lime juice, soy sauce and ginger. Add the chicken to the marinade and leave for a minimum of half an hour (maximum 6 hours).

Step 5: Slice the mango

Peel and cut the mango into thin slices.

Step 6: Barbecue the chicken

Cook the breasts of chicken on the barbecue for 5-7 minutes, occasionally turning to avoid burning.

Step 7: Finish the salad

Add the two tablespoons of lime juice, sugar, fish sauce and chilli to a second bowl. Mix well before adding the mango, shallots, coriander and basil. Fold together.

Step 8: Serve

Place the barbecued chicken onto a serving plate and heap a generous portion of the salad on the side. Enjoy with steamed rice and a drizzle of soy sauce.

    I made this and I found this recipe easy to follow and the result was very delicious. Instead of the mango salad I included buttery asapargus and new potatoes.
