How To Make Barbecue Greek Chicken With Olive Feta Salad

Step 1: You will need…
- 2 chicken breasts
- 2 tbsp lemon juice
- 1 clove of garlic, minced
- 1 tsp cumin powder
- 2 tbsp oregano
- 1 tbsp chopped parsley
- 2 tbsp olive oil
- for the salad:
- 100 g cherry tomatoes, halved
- 2 tbsp black olives, pitted
- 2 tbsp feta cheese, diced
- ½ onion, sliced
- 2 fresh oregano leaves
- 1 tbsp mint, chopped
- 2 tbsp lemon juice
- 2 tbsp olive oil
- salt and pepper
- 2 bowls
- 2 spoons
- 1 pair of tongs
- 1 tray
- cling film
- 1 barbecue, either charcoal or gas
- 1 bottle of water for dousing any flames
Step 2: Prepare the barbecue
If you plan to use a charcoal barbecue, light it 30-45 minutes before you cook and wait until the charcoal has turned white and there are no more flames. If you are using an electric barbecue, turn to high and leave for 20 minutes to heat up.
Step 3: Marinate the chicken
Put the lemon juice, garlic, cumin, dried oregano, parsley, olive oil and salt and pepper into a bowl. Mix the ingredients together well and add the chicken. Cover with cling film and allow to marinate for a few hours in the fridge.
Step 4: Make the salad
In another bowl put the cherry tomatoes, onion, feta cheese, olives, oregano, lemon juice, oil and season with salt and pepper. Mix the ingredients together well.
Step 5: Cook the chicken
Place the chicken on the barbecue and cook the chicken for 5-7 minutes on either side.
Step 6: Serve
Transfer the chicken to a large serving plate and heap some salad on the side. Drizzle over the salad with any remaining marinade. Serve the chicken as part of the salad, as a main course or in a sandwich.
