How To Make Barbecued Bread Salad With Tomato & Anchovy

Step 1: You will need...
- 3 slices of crusty country bread
- 3 tomatoes, diced
- 2 tbsp basil, chopped
- 4 tbsp parsley leaves
- 2 garlic cloves, minced
- 4 tbsp shaved parmesan
- 8 to 12 anchovy fillets, finely chopped
- 80 ml olive oil
- 2 tbsp lemon juice
- salt and pepper
- 1 brush
- 2 tongs
- 1 bowl
- 1 spoon
- 1 cutting board
- 1 knife
- 1 charcoal or gas barbecue
- 1 bottle of water to douse any flames
Step 2: Prepare the barbecue
If you have a charcoal BBQ light it 30-45 minutes before you plan to cook. It is ready to cook on when there are no more flames and the charcoal has turned white. If you are using a gas BBQ, light it up and turn it to the highest setting. Leave it for 15-20 minutes to heat up.
Step 3: Season the bread
Place the three slices of bread onto a baking tray and generously brush both sides of each one with olive oil and season with salt and pepper.
Step 4: Barbecue the bread
Using your tongs, place the seasoned bread onto the grill and grill for 1-1 ½ minutes each side. Move the bread around to a cooler part of the grill if it's becoming burnt. When ready, remove from the grill.
Step 5: Cut the bread
Chop all slices of bread into medium-sized cubes.
A good quality bread will enhance this salad!
Step 6: Combine the ingredients
Put bread into the large bowl, followed by the chopped tomatoes, anchovies, garlic, shaved parmesan, lemon juice, olive oil, basil, parsley and lightly season with salt and pepper. Mix well.
Step 7: Serve and enjoy
Spoon the salad onto a large serving plate. This is fantastic as a starter or a light snack.
