How To Make Barbecued Chicken 'BLT' Sandwich

Step 1: You will need...
- 4 slices of country bread
- 8 slices of bacon
- 1 tomato, sliced
- ½ an avocado, peeled and sliced
- 1 small bunch of rocket
- 60 ml olive oil
- 4 tbsp mayonnaise
- 1 tbsp black pepper, crushed
- salt and pepper
- 1 chicken breast, sliced in two
- 1 barbecue
- 1 spoon
- 1 brush
- 1 set of tongs
- 1 tray
- 1 chopping board
- 1 knife
Step 2: Season the bread and chicken
Using a brush, coat each slice of bread with olive oil. Now season with salt and pepper, turn the slices over and repeat on the other side. Next, coat both pieces of chicken with the oil and then season, remembering to coat both sides.
Step 3: Barbecue the chicken, bacon and bread
Place both pieces of chicken on the barbecue and grill for 2-4 minutes. Also add half of the bacon which needs less time. If the flames rise, splash over a small handful of water to stop the meat from burning.
After 2 minutes, turn the bacon and a bit later, also turn the chicken. Remove first batch of bacon when brown and crisp and add the second.
Remove the chicken when golden. Also add several slices of bread while the last rashers of bacon cook. Turn the bread after a minute then remove the remaining bacon. Finally take off the bread making sure it doesn't burn.
Step 4: Mix the mayonnaise and crushed pepper
Add the pepper to the mayonnaise and mix together well.
Step 5: Put the sandwich together
Take two slices of bread and coat both on one side only with the pepper mayonnaise. Now to one add the rocket, bacon, one piece of chicken, three slices of tomato, and some avocado. Now season with a little salt and place the other slice of bread on top. Repeat the other sandwich in exactly the same way. Finally slice each in half.
Step 6: Serve
Enjoy this barbecued chicken sandwich alone for a hearty breakfast or accompanied by crisps or chips for a more filling lunch.

This sandwich was named incorrectly. A BLT means that the sandwich only has Bacon as the main meat. When there is chicken/turkey AND bacon it is called a "Club" sandwich. So this should be renamed as a BBQ Chicken Club sandwich.
My goodness! It looks good but hey...this is very serious heart attack food, especially for those like me with already high blood pressure. I'll just watch YOU eat it!! LOL
