Make the glaze

Place a saucepan over a moderate heat and in it combine the soy sauce, orange juice, garlic, and brown sugar. Bring to a boil and leave it to reduce the quantity by half, which takes about five minutes. When reduced down, take the pan off the heat.

Cook the chives

Half fill a saucepan with water and bring it to a boil. Add the chives, give them a little stir, and cook for one minute. Remove and put them straight into the bowl of iced water. Remove them after twenty seconds and put them on a tray.

This process will have softened the chives. We use them tie the wraps up so they need to be softer to avoid breaking.

Barbecue the chicken

Before cooking the chicken, brush one side of chicken with the glaze and then put them on the barbecue. Brush the up side with the glaze then turn. Glaze again and cook for two minutes. Keep repeating until chicken is cooked and set it aside.

Cut the chicken

Slice both pieces of chicken in half lengthwise and set aside.

Make the wraps

First, layer the wraps. Place one lettuce leaf on the board, then a slice of chicken in middle, a few carrots, a little coriander, basil, and mint and roll the wrap up.

Put two chives underneath and tie them in a knot, not pulling too hard so as to avoid breaking them. Next, chop off the long ends and also remove the ends of the lettuce. Repeat this process until all the wraps are tied.
