How To Make Barbecued Corn On The Cob

Step 1: You will need...
- 4 fresh corn ears, with the husks on
- 100 g butter, at room temperature
- ½ tsp cayenne pepper
- ½ tbsp paprika
- 2 garlic cloves, minced
- 1 tbsp coriander, chopped
- 1 tsp salt
- the juice of 1 lime
- 1 bowl
- 1 spoon
- 1 brush
- 2 tongs
- 1 barbecue, charcoal or gas
- 1 bottle of water for dousing any flames
Step 2: Prepare the barbecue
If you have a charcoal BBQ light it 30-45 minutes before you plan to cook. It is ready to cook on when there are no more flames and the charcoal has turned white. If you are using a gas BBQ, light it up and turn it to the highest setting. Leave it for 15-20 minutes to heat up.
Step 3: Prepare the corn
Using your hands, remove the hairy strings from the corn and discard. Then, place the corn into a bowl.
Step 4: Soak corn in water
Taking a large bowl filled with water, pour it over the corn and leave to soak for half an hour.
Step 5: Prepare the butter
To the butter, add the paprika, cayenne, salt, lime juice, garlic, coriander. Mix it all together well with a spoon.
Step 6: Barbecue the corn
Having removed the corn from the water, now place on the BBQ and grill for 20 minutes, occasionally turning them using your tongs.
The husk is left on to create steam and to avoid the corn burning. If it's windy the flames will not be even so move the corn around to make sure they are evenly cooked.
After roughly 20 minutes, brush the corn generously with the paprika, garlic butter. Remove from the heat and place onto a baking tray. Your corn is now ready to serve
Step 7: Serve and enjoy
Brush some more oil on the corn just before serving.
Tips & Comments
Looks great but if the gas barbecue gets preheated for 15-20 minutes, and the corn gets soaked for 30 minutes, shouldn't pouring water over the corn be step 1, not step 5?
I prefer to soak the corn complete in the husks (you kind of have to tug some of the husk open to allow the water in for a couple hours beforehand, then grill them in the husk. It doesn't carmelize/burn the kernels so much and you get more of a steam-cook than a bbq. very simple for camping or cook-outs if you dont have time to prep a lot of ingredients.
Take the corn husks and all soak it in salted water for 20 thirty minutes, throw it on the grill for twenty minutes per side. The idea is to caramelize some of the kernels Take off and husk, the silk comes right off. Then use your buttered mix.
