Prepare the barbecue

If you have a charcoal BBQ light it 30-45 minutes before you plan to cook. It is ready when there are no more flames and the charcoal has turned white. If you are using a gas BBQ, light it up and turn it to the highest setting. Leave it for 15-20 minutes to heat up.

Cut the peaches

Dice two of the peaches into small pieces, discarding the stones and put them into the saucepan. Slice the ends of the other 2 peaches ready to use a little later.

Prepare the sauce

Place the saucepan of peaches on the hob over a high heat. Add the white wine, water, sugar, the basil leaves and bring to a simmer. Cook for 10-15 minutes until the peaches are soft and the liquid has reduced by half.

Season the duck and peaches

First, season both sides of the duck breast with salt and pepper. Brush both sides of the remaining peach slices with oil and season with salt and pepper.

Finish the sauce

The liquid should now have reduced. Remove the basil leaves. Then remove the pan from the heat.

Spoon the sauce into the blender, put the lid on and pulse a few times. Then, blend on full power until you have a smooth liquid. When finished, place back into the saucepan.

Barbecue the duck and peaches

Using your tongs, place the duck breast, skin side down on the barbeque, then place the half peaches along side it.

There will be lots of flames, so sprinkle on water to douse them and move it if necessary to a cooler part of the barbeque.

The breast should grill for 8 to 10 minutes each side for medium done. If you prefer it more well done then cook for longer.

Another tip: If you have a lid on your BBQ then close it down as this will help the cooking process.

After 8 or 10 minutes turn the duck and then the peaches to grill the other side. Then, brush generously the breast and peaches with the sauce and leave to cook. The peaches should now be ready so turn them over for a few seconds to glaze the sauce, remove from the heat and place on the tray. Once the duck is cooked turn once more, brush with the sauce and turn over again to glaze, then remove.

Slice the duck

Let the duck rest a little before cutting. Slice it diagonally and cut into medium slices.

Finishing touches

Take several slices of meat and place on a large serving plate. Then place two half peaches around it. Spoon on some sauce at the side and finally garnish with a few sprigs of basil.
