How To Make Barbecued Entrecote

Step 1: You will need...

  • 2 entrecote steaks, 250g each
  • 2 tbsp olive oil
  • salt
  • pepper
  • 150 g butter, at room temperature
  • 2 tbsp parsley, chopped
  • 1 tbsp chives, chopped
  • 3 garlic cloves, chopped
  • 1 tsp coarse salt
  • 150 g butter, at room temperature
  • 12 sun dried tomatoes
  • 1 tbsp rosemary
  • 1 garlic clove, chopped
  • 1
  • 1 pair of Tongs
  • 1 Brush
  • 1 Tray
  • 1 Some Parchment paper (wax paper)
  • 2 spoons
  • 1 cutting board
  • 1 knife
  • 1 BBQ

Step 2: Prepare the BBQ

If you have a charcoal BBQ light it 30-45 minutes before you plan to cook.

It is ready to cook on when there are no more flames and the charcoal has turned white. If you are using a gas BBQ, light it up and turn it to the highest setting. Leave it for 15-20 minutes to heat up

Step 3: Make the herb butter

Taking the bowl of butter now add the parsley, chives, garlic, rock salt then combine well with a spoon. A quick tip! This can be all mixed in a blender if you prefer!

Step 4: Roll the herb butter

Place the kitchen paper on a flat surface and spoon the herb butter into a line at the edge of the paper. Then carefully roll up the parchment up. Then twist both ends tightly, one clockwise one anti clockwise The end result should look like a cracker. Then chill in the fridge for one hour or until the butter is set.

Step 5: Soak the tomatoes

Pour water over the sun dried tomatoes. This removes a lot of the salt and makes them plump and moist. Leave for roughly half an hour and then drain.

Step 6: Chop the tomatoes

Once drained using a very sharp knife chop the tomatoes as finely as you can, almost making a paste out of them.

Step 7: Make the sun dried tomato butter

To the butter add the sun dried tomatoes, rosemary, garlic, salt and combine well using a spoon.

Step 8: Roll the sun dried butter

Place the kitchen paper on a flat surface and spoon the sun dried butter into a line at the edge of the paper. Then carefully roll up the butter. Then twist both ends tightly,. one clockwise one anti clockwise The end result should look like a cracker. Then chill in the fridge for one hour or until the butter is set.

Step 9: Season the steak

Brush the entrecote steaks with oil and then season generously with salt and pepper Then turn over and season the other side. Your steaks are now ready to BBQ.

Step 10: Barbecue the steak

Place the steaks on the grill. For a medium rare grill for 4-6 minutes on each side. If you like it more well done then add a few more minutes to the cooking time. After roughly four minutes turn the steaks over and cook the other side. Then when your steaks are ready remove from the grill with your tongs and place on a baking tray.

Step 11: Slice the butter

Take both the butters out of the fridge, now carefully unroll one and then unroll the other. Then taking a sharp knife slice them in half then slice into small rounds.

Step 12: Assemble the dish

Carefully tong your steaks onto a serving plate…. Then place three rounds of butter on top of each steak. Your steaks are now ready to be served. Enjoy!

A final tip! If you have any butter remaining, it will keep in the fridge for one week or up to one month in the freezer.
