Step 1: You will need...

  • 1 entrecote, weighing 350g
  • 1/2 tbsp rosemary, chopped
  • 1 garlic clove, minced
  • 1 1/2 tbsp olive oil
  • salt and pepper
  • for the sauce:
  • 4 anchovy fillets, chopped
  • 2 tbsp lemon juice
  • 2 tbsp parsley, chopped
  • 25 g butter
  • 2 tbsp olive oil
  • 1 tray
  • 1 spoon
  • 1 small saucepan
  • 1 pair of tongs
  • 1 cutting board
  • 1 knife
  • 1 charcoal or gas barbecue
  • 1 bottle of water to douse any flames

Step 2: Prepare the barbecue

If you have a charcoal BBQ light it 30-45 minutes before you plan to cook. It is ready to cook on when there are no more flames and the charcoal has turned white. If you are using a gas BBQ, light it up and turn it to the highest setting. Leave it for 15-20 minutes to heat up.

Step 3: Season the steak

Generously season the steak on both sides with salt and pepper. Add the rosemary, garlic and oil. Using your hands, rub it in to the meat. Turn it over and rub the other side. Allow to marinate for a while.

Step 4: Make the sauce

Place the saucepan over a medium heat. Add the olive oil and the butter, stir and allow to melt. Add the anchovies and stir in, allow to bubble. Season with pepper, add the lemon juice, stir again and then turn the heat off, continuing to stir and combine. Remove from the heat.

Step 5: Barbecue the steak

Place the entrecote onto the grill. Allow to cook for roughly 4 minutes on each side. After this time turn the steak over and cook the other side.

A quick Tip! Douse any flames with water!

When it is ready, remove from the grill and place on a baking tray.

Step 6: Slice the entrecote

Transfer the steak onto the chopping board. Then using your sharp knife, slice against the grain into thin slices.

Step 7: Finishing touches

Just before serving add the parsley to the sauce and stir. Place half the slices onto an individual serving plate and drizzle over some anchovy sauce.

Step 8: Serve and enjoy
