How To Make Barbecued Lime And Lemon Grass Pork

Step 1: You will need...
- 2 small pork fillets, tenderloins
- 4 lemon grass stalks, roughly chopped
- the juice and zest of 2 limes
- 4 garlic cloves, chopped
- 4 tbsp fish sauce
- 4 tbsp brown sugar
- 2 shallots, chopped
- 2 tbsp oyster sauce, found in Asian food suppliers
- 1 tsp ground black pepper
- for the salad:
- 6 radishes, sliced
- 1 bunch of coriander
- 1 tbsp lemon juice
- 1 tbsp soy sauce
- 250 g shredded cabbage
- 1 tbsp olive oil
- salt and pepper
- 1 cutting board
- 1 knife
- 1 small bowl
- 1 medium-sized bowl
- 1 spoon
- 1 blender
- 1 set of tongs
- 1 tray
- 1 barbecue, charcoal or gas
- 1 bottle of water to douse any flames
Step 2: Prepare the barbeque
If you have a charcoal barbeque light it 30-45 minutes before you plan to cook. It is ready when there are no more flames and the charcoal has turned white. If you are using a gas barbeque, light it up on high and leave it for 20-30 minutes to heat it.
Step 3: Make the marinade
Into the blender put the lemon grass, lime juice, zest, garlic, shallots, fish sauce, oyster sauce, sugar, and black pepper. Blend until it forms a smooth paste.
Step 4: Marinate the pork
Place the tenderloin in the bowl, pour over the marinade and let them marinate for at least one hour before grilling.
Step 5: Barbecue the pork
Place the pork on the barbecue. Leave it to cook for around 12 minutes. Roll the pork from one side to the other during cooking until it becomes nicely brown.
Step 6: Make the salad
In a bowl place the radishes, cabbage, coriander, lemon juice, soy and the olive oil. Gently mix them together.
Step 7: Slice the pork
There are many ways to slice the pork or meat in general. The basic rule is always to cut against, or across the grain. Cut the ends off and cut it into three pieces.
Step 8: Serve
Place the slices on the plate and top with a little of the salad on each one. These can also be served with some freshly cooked rice.
Tips & Comments
I assume you could use a griddle/ridged pan if you lived in a flat and did not have a BBQ or it was the depths of winter! I am going to cook it as part of a Thai meal and will report back.
