Check the barbecue

If you have a charcoal barbeque light it 30-45 minutes before you plan to cook. It is ready when there are no more flames and the charcoal has turned white. If you are using a gas barbeque, light it up on high and leave it for 20 minutes.

Make the marinade

In to a bowl put the fish sauce, soy sauce, rice wine, sugar, honey, garlic, ginger, sesame oil and chilli. Mix together well.

Slice and marinate the pork

Place the tenderloin on the cutting board. Slice it in to five to six medallions, each one about 2-2.5cm wide. Place them in the marinade and leave for about 1 hour.

Barbecue the pork

With the tongs, place the medallions on the barbecue. Give them about three to five minutes on each side. Brush them generously with the marinade. Remove from the barbecue when cooked. If any flames shoot up, use a little water to extinguish them.

Barbecue the onions

Dip the onions in the marinade and place on the barbeque, give them about two minutes on each side.
