How To Make Barbequed Jumbo Prawns

Step 1: You will need
- 8 jumbo prawns
- 2 garlic cloves, minced
- 2 tbsp parsley, finely chopped
- 80 ml olive oil
- 1 tsp chilli flakes
- 1 tbsp sweet paprika
- 300 g cooked chickpeas
- 2 tomatoes, diced
- half red onion, sliced
- 3 tbsp coriander, roughly chopped
- juice of 1 lemon
- salt and pepper
- 2 trays
- 1 bowl
- 1 chopping board
- scissors
- tongs
- 1 barbecue, charcoal or gas
- 1 bottle of water for dousing flames
Step 2: Prepare the barbecue
If you have a charcoal barbeque light it 30-45 minutes before you plan to cook. It is ready when there are no more flames and the charcoal has turned white. If you are using a gas barbeque, light it to a high setting and leave it for 15-20 minutes.
Step 3: Prepare the prawns
Use the scissors to cut the shell. Start from just behind the back of the head and carefully cut down to the tail. Peel the shell off, leaving the head and tail on. Remove the vein that runs along the back.
Repeat the same process with all the prawns and place them onto the tray.
Step 4: Make the salad
Into the bowl add the chickpeas, tomatoes, onion, coriander, lemon juice, paprika, chilli flakes and three quarters of the oil. Season with salt and mix everything together.
Step 5: Season the prawns
Drizzle the remaining oil onto the prawns. Add the garlic and the parsley. Season with salt and pepper and gently mix together.
Step 6: Barbecue the prawns
Place the prawns onto the barbecue and cook for 1 1/2 minutes. Turn the prawns and cook for a final 45 seconds. Remove them from the barbecue and place onto a tray.
Step 7: Serve
Spoon some of the salad onto a plate and position two prawns on top. Finally, use a little of the salad to decorate the plate and serve.
