Step 2: Prepare the barbeque
If you have a charcoal barbeque light it 30-45 minutes before cooking. It is ready when there are no more flames and the charcoal has turned white. If you are using a gas barbeque, light it to the highest setting and leave it for 15-20 minutes.
Step 3: Prepare the artichokes
Half fill the large bowl with water and squeeze in the juice from 1/2 a lemon. Take the artichokes and cut away the outer and inner layers of leaves until you reach the hearts.
Cut off the top third and discard. Cut the hearts in half down the centre and place in the bowl.
Step 4: Cook the artichokes
Place the saucepan on a high heat and add four tablespoons of olive oil. When the oil is hot add the onions, carrot, garlic and bacon. Stir together and fry for a few minutes until the onion is soft and translucent.
Half fill the saucepan with water. When it is nearly boiling, add the artichoke hearts. Add the juice from half a lemon, thyme and season with salt and pepper.
Simmer for ten minutes or until artichokes are soft. Spoon them onto a tray, drizzle over some olive oil and season with salt and pepper.
Step 5: Barbecue the artichokes
Place the artichokes flat side down onto the barbecue and cook for 5 minutes or until they start to blacken. Turn and cook for another five minutes. When cooked, remove from the barbeque and place onto a tray.
Step 6: Make the dressing
Into the small bowl, add the lemon zest, juice and remaining oil and mix together.
Step 7: Serve
Place the artichokes onto a plate and drizzle with the lemon dressing. Finally, use the peeler to add some parmesan shavings and serve.
