Prepare the barbecue

If you have a charcoal barbecue, light it 30-45 minutes before cooking. It's ready when there are no flames and the charcoal has turned white.

For a gas barbecue, light it and turn it to the highest setting. Leave for 15-20 minutes to heat up.

Make the marinade

Into the bowl, add the shallots, garlic, ginger, coriander, basil, soy sauce, rice wine vinegar, sugar and sesame oil. Mix together well.

Prepare the fish

Using scissors, cut the fins off both sea bass. Start with the fin on top of the fish and then the one on the underside. Using a sharp knife, cut off the heads,

Finally, make a few cuts on both sides of the bass.

Wrap the fish

Place a sheet of the foil, shiny-side down onto a tray. Add 1/4 of the marinade and place one of the fish on top. Spoon over another 1/4 of the marinade and seal the foil tightly, folding in each side.

Repeat with the other fish and place the parcels onto a tray.

Barbecue the fish

Place the parcels onto the barbecue and cook for 12 minutes. This could also be done in the oven.

Once cooked, remove the sea bass from the barbecue.

Garnish and serve

Put one of the parcels on a plate and carefully open it. Remove the fish from the foil, pour over any remaining juice and discard the foil. Decorate with some soy sauce, garnish with a slither of carrot and a sprig of coriander and serve.
