How To Make BBQ Curried Baby Chicken

Step 1: You will need...
- 2 baby chickens
- 2 tbsp coriander, chopped
- 6 garlic cloves, minced
- 3 shallots, chopped
- 1 tbsp coriander powder
- 2 tsp curry powder
- 2 tbsp fish sauce
- 2 tsp sugar
- 2 tbsp vegetable oil
- 1 small green chilli, chopped
- 100 ml coconut milk
- 1 lime, cut in half
- salt and pepper
- 1 chopping board
- 1 sharp knife
- 1 scissors
- 1 blender
- 1 spoon
- tongs
- 1 tray
- 1 bowl
- 1 barbecue, either charcoal or gas
- 1 bottle of water (for dousing any flames)
Step 2: Make the marinade
Put the coriander, garlic, shallots, coriander powder, curry powder, fish sauce, sugar, chopped chilli and the oil into the electric blender. Blend all of the ingredients together into a fine paste.
Step 3: Prepare the chicken
Using the scissors, cut along the spine of the chicken. Remove and discard it and turn the chicken over. Press down hard to flatten the chicken and cut a few slits into the legs. Transfer to a bowl. Repeat with the other chicken.
Step 4: Marinate the chicken
Pour the marinade into the bowl and ensure that the chicken well coated. Leave to marinate overnight or for a minimum of 2 hours.
Step 5: Prepare the barbecue
If you plan to use a charcoal barbecue, light it 30-45 minutes before you cook and wait until the charcoal has turned white and there are no more flames. If you are using an electric barbecue, turn to high and leave for 20 minutes to heat up.
Step 6: Barbecue the chicken
Using the tongs, place the chicken onto the barbecue, season with salt and pepper and cook for 15-20 minutes. Pour coconut milk into the bowl in which you made the marinade and spoon over the chicken. Turn every 3-5 minutes, spooning on more marinade as you go and remove.
Step 7: Serve and garnish
Transfer the chicken to the chopping board, cut off the legs and cut in half along the breast. Place the chicken onto a serving plate, garnish with half a lime and serve with rice or salad - an instant classic at family barbecues!
