How To Make BBQ Fillet Steak With A Mushroom Tart

Step 1: You will need...

  • 400 g fillet steak, cut into 4
  • 2 tbsp olive oil
  • 1 roll of puff pastry
  • 3 tbsp flour
  • 250 g oyster mushrooms
  • 35 g butter
  • 1 tbsp thyme, chopped
  • 120 ml single cream
  • 1 tbsp pickled green peppercorns
  • 1 1/2 tbsp parsley, chopped
  • 2 sprigs of parsley to garnish
  • 1 egg, beaten
  • salt and pepper
  • 1 small knife
  • 1 brush
  • 1 pair of tongs
  • 1 spoon
  • 1 fork
  • 1 wooden spoon
  • 1 oven tray
  • 1 frying pan
  • 1 pair of scissors
  • cardboard 12x6cms and 8x4cms
  • 1 barbecue, gas or charcoal
  • 1 bottle of water for dousing any flames

Step 2: Prepare the barbecue

If you have a charcoal barbecue, light it 30-45 minutes before you plan to cook. If you are using a gas barbecue, turn it to its highest setting and leave to heat up for 15-20 minutes before you cook.

Step 3: Preheat the oven

Set the oven temperature to 200ºC (428ºF/ gas mark 7).

Step 4: Prepare the pastry

Lightly dust the work surface with flour. Place the pastry onto the work surface. Place the largest piece of cardboard on one corner of the pastry.

Use the knife to cut the pastry using the edges of the cardboard as a guide and then carefully remove the cardboard and cut 4 more rectangles in this way. Discard the remaining pastry.

Place the smaller cardboard in the centre of one of the pastry rectangles and use this as a guide to cut around. Remove and discard the centre. Repeat this with another of the rectangles so that you are left with two frames.

Brush the edges of the complete rectangles with beaten egg and place the pastry frames on top. Use a fork to make small holes in the centre of the pastry, dust with a little flour and place onto the tray.

Step 5: Cook the pastry

Place the tarts in the oven on the middle shelf and cook for 20 minutes.

Step 6: Make the mushroom filling

When the tarts have been cooking for 10 minutes, put the frying pan onto a medium to high heat. Add the butter and the mushrooms and fry for 3 minutes until soft.

Add the thyme, peppercorns and cream and season with salt and pepper. Stir and cook for a final 3 minutes then remove from the heat. Add the chopped parsley and stir in.

Step 7: Finish the tarts

Remove the pastry from the oven and fill the middle with the mushroom mixture.

Step 8: Season the fillet steaks

Drizzle the fillet steaks with a little oil and season with salt and pepper. Do this on both sides of the meat.

Step 9: Barbecue the steak

Place the fillet steaks onto the barbecue and cook for 2 minutes on each side.

Step 10: Garnish and serve

Place the mushroom tarts onto a plate. Top each with two of the steaks, garnish with a sprig of parsley and serve.
