How To Make BBQ Pulled Pork Sandwiches

Step 1: You Will Need
- Meat Smoker
Step 2: Scoring Butt
Take you knife and score the meat just a little bit. This will help to increase the surface area of the pork that gets exposed to the rub, which adds tons of flavor. Flip to the other side, score the fatty side as well.
Step 3: Mustard
What we need to do to get this ready is a similar process as what we do to the ribs. We cover it in yellow mustard. We do this because the high vinegar content of the mustard will help break down this pork.
Step 4: Mix It Up
Mix all the spices listed.
Step 5: Rub
The mustard will also help the rub stick to the meat. So we cover it with very generous handfuls of the spice mix
Step 6: Wrap
Now that we finished rubbing down our pork butt what we want to do is wrap it in foil so we can put it in the refrigerator overnight.
Step 7: Smoke It
We are going to put pork in the smoker right now. We are going to put it in fat side up and that's so this big ridge of fat that we scored earlier can drip down through the pork and make it tender and juicy.
Step 8: Pull
Take two forks and start pulling the pork away. It should just come apart in strands.
Then put it into a glass bowl. Dump a half to full cup of your finishing sauce right on top of the pulled pork and using your tongs mix it in.
Step 9: Make a Sandwich
Now add the pork mix on the slice of white bread. If you want it to be traditional Carolina style go ahead and put a little dollop of coleslaw right on top.
