How To Make BBQ Swordfish With BBQ Vegetable Relish

Step 2: Prepare the barbecue
If you plan to use a charcoal barbecue, light it 30-45 minutes before you cook and wait until the charcoal has turned white and there are no more flames. If you are using an electric barbecue, turn to high and leave for 20 minutes to heat up.
Step 3: Prepare the vegetables
Place all of the vegetables onto the tray, lightly brush with oil and season with salt and pepper. Turn the vegetables over and repeat.
Step 4: Barbecue the vegetables
Place all of the vegetables onto the barbecue and cook for approximately 3-4 minutes either side. Remove the aubergine and courgette and allow the peppers to cook until soft. Remove and cool for 10 minutes.
Step 5: Dice the barbecued vegetables
Using the knife, cut the vegetables into strips and then into cubes. Finish by transferring the diced vegetables into a bowl.
Step 6: Finish the relish
Into the bowl, add the parsley, mint, pine nuts, olive oil, red wine vinegar and honey. Season with salt and pepper and mix together well.
Step 7: Season the swordfish
Drizzle over the fillets with olive oil and season with salt and pepper. Turn the fillets over and repeat.
Step 8: Barbecue the swordfish
Barbecue the fillets for 1-2 minutes before using the spatula to turn the fish over and cook it for another 30 seconds. Remove the fillets from the barbecue.
Step 9: Serve
Dish 2 of the fillets onto a large serving plate and spoon over with the vegetable relish. Eat hot and enjoy with a chilled glass of white wine and some crusty bread.
