- 1 small piece fresh ginger
- 6 garlic cloves, finely chopped

- 2 fresh green chillies
- 2 tsp coriander
- 1 tsp cumin seeds
- 1 tsp garam masala
- 1/4 tsp turmeric powder
- 1 tsp fresh coriander, chopped
Method
Into a hot pan add some good quality vegetable oil (or ghee) along with the cumin seeds, onion, ginger, garam masala, turmeric, coriander, garlic and chopped green chilli. Mix well, allowing them to fry for a moment.
Add the tomatoes and the beans and stir well, bringing to the boil then reducing the heat and allowing to simmer for 20-25 minutes to cook and thicken. Serve with a garnish of fresh coriander, as a main dish or as an accompaniment to another curry dish.
