How To Make Beef Couscous

Paul Ellis, cookery school owner, shows you how to make his version of beef couscous. This delicious recipe can be served hot as a main meal, or as a cold salad.

Ingredients

  • 1 beef fillet
  • couscous
  • 1 basil, diced
  • 2 spring onion, diced
  • 2 carrot, diced
  • peas
  • 2 tomato, diced
  • olive oil
  • salt

Method

Cut your beef fillet into small pieces and fry in a pan.

Place your couscous in a bow, pour over warm water and leave to stand for about 15 minutes by which time the water will be absorbed.

Once the beef has browned, add you diced tomato, carrot, spring onion and basil. Mix well and cook for about 3 minutes.

Add a little olive oil to the couscous while it is still absorbing liquid.

Add the beef mixture to your couscous, season with a little salt and leave until the water has been absorbed and your couscous is tender.
