Step : You will need

  • 1 tbsp Olive Oil
  • 500 g rump/ fillet steak
  • 110 g butter
  • 1 medium Onion
  • 2 garlic cloves
  • 300 g button mushrooms
  • 280 ml beef stock
  • 2 small glasses of red wine
  • 1 tsp Worchestershire sauce
  • 280 ml sour cream
  • salt and pepper
  • pinch paprika

Cut 500 g of steak into strips. Finely dice 1 onion, crush and chop 2 garlic cloves.

Heat the olive oil in a heavy cast iron pan. When hot add the steak pieces and season well with salt and pepper. Flash fry for a minute, remove from pan and set aside.

In the same pan melt 100 g of butter, add the onions and garlic and cook for roughly 2 minutes until soft.

Add 300 g of button mushrooms, season again. When the mushrooms begin to soften return the beef to the pan, add 280 ml of beef stock, 2 small glasses of red wine and 1 tsp of Worcestershire Sauce.

Lastly stir in 280 ml of sour cream and a pinch of paprika. Leave to simmer for 10 minutes.

Serve with white rice, crusty bread, or even mashed potato. For a finishing touch sprinkle with chopped parsley.

    well in 23 years as a chef in the ROYAL NAVY and cooked for dignatories and royalty, i have never seen a recipe like this so incorrectly made, RED WINE ?? and more stock than you get in a casserole, its a quick flambeed dish and finished with cream !!! oh dear oh dear, nice accent though lol

    I reduced the wine by half, added fresh cream (not sour), used fillet added some mixed herbs while doing the mushrooms and I must compliment all this was so tasty :)

    Seriously all wrong. The sour cream only ever goes into Stroganoff when it is off the heat. And I have never seen wine in a Stroganoff here in Eastern Europe, which is not far from the dish's birthplace in Russia. That said, the dish presented here, although not Stroganoff, looks like it might be pretty tasty. Thanks!

    There's no brandy in this! I agree with Master_Chef stroganoff is a flash pan fried dish, ideally made with fillet steak. Flash fry the steak, flambé in brandy and set aside. In the same pan, fry the onions, garlic and mushrooms. Return everything to the pan and add the cream (sour or in fact double, brandy helps with the double). Don’t forget to season as you go… I agree with anarchy-inc there’s no place for red wine in stroganoff…

    wrong recipe...beef stroganoff is a pan-fried dish, cooked very quickly and most important when you add the sour-cream the pan must be heat off!

    Ok first of, there is no red wine EVER in Stroganoff. Also this sauce look WAY too runny, back off on the amount stock. Just before adding the stock, add a teaspoon of cornflour to help thicken the sauce. After the stock also add a tablespoon of German mustard. Any mustard will do, just not the super strong English varieties. Then you will have REAL Stroganoff.
