Step 1: You will need

  • 250 g strawberries
  • 50 g icing sugar (optional depending on how sweet you want the coulis)
  • a dash of liqueur (Strawberry cointreau is good for strawberries)
  • 1 blender
  • 1 small vegetable knife
  • 1 sieve or chinois
  • 2 bowls
  • 1 plastic spatula
  • 1 whisk

Step 2: Prepare the strawberries

To begin, wash and dry the strawberries.

Step 3: Cut the strawberries

Remove the stems of the strawberries and cut them in half.

Step 4: Blend

Place the strawberries in the blender and purée.

Step 5: Strain the puree

When the strawberries reach a smooth consistency, rub them through a fine sieve placed over a bowl. This way will ensure the seeds are removed.

Step 6: Complete and serve

Add icing sugar, if using it in your recipe and then stir until dissolved.

If you are using it in your recipe, add 2 tablespoons of liqueur at this stage. Keep in the fridge until required, if the coulis is too thick, thin it down with a little water.
This strawberry coulis is best served over a bowl of your favourite ice-cream.
