Step 1: Reduce the wine and shallot

  • 50 ml white wine
  • 1 shallot, finely chopped
  • 200 g unsalted butter, cut in small cubes
  • 1 tbsp lemon juice
  • salt
  • pepper
  • A dash of Tabasco or pepper sauce
  • 1 small saucepan
  • 1 small whisk

Step 2: Whisk in the butter

Maintain the sauce over a moderate heat and whisk in a few cubes of butter.

Step 3: Continue adding butter

When the butter has been completely incorporated, whisk in some more butter and so on, until the sauce is thick and warm.

Step 4: Season the sauce

Season with lemon juice, salt, pepper and Tabasco.

If the wine has reduced too much add a few more drops.

The sauce will not keep for too long. Any that is left over can be refrigerated and then used again provided it is whisked into a freshly made consistency and rewarmed.

The sauce can be infused or finished with any condiment required for instance: soy sauce, red wine or different herbs.

    Oh my god. First forget the tabasco. Don't boil the butter. The butter has to be cold. Blend slowly the butter and don't do that on the fire. Watch another demonstration!
