Step 1: You will need

  • 5 g fresh yeast
  • 60 ml warm water
  • 120 ml milk
  • 120 g flour
  • 2 egg yolks
  • 2 egg whites, whipped
  • 1 pinch salt
  • 1 pinch sugar
  • 30 g butter melted
  • 60 ml vegetable oil for frying
  • 2 tbsp sour cream
  • 1 tbsp caviar
  • 1 tbsp chives, chopped
  • 1 frying pan
  • 1 spatula
  • 2 bowls
  • 1 whisk
  • 1 spoon
  • 1 tray
  • cling film

Step 2: Prepare the yeast

Put the yeast into the water, mix it up and leave it to stand for 15 minutes.

Step 3: Make the batter

To a large bowl and add the flour, sugar, salt and milk. Give the yeast mixture a quick stir and pour it into the bowl. Add the melted butter and finally the egg yolks.

Mix the ingredients together until well combined. Cover tightly with cling film and leave for about an hour to rise.

A useful tip! - Don't leave it for longer than an hour as the blinis will taste fermented.

Step 4: Make the blini

Give the egg whites another quick whisk and add them to the batter. Using the whisk, gently combine.

Step 5: Fry the blini

Place the frying pan over a medium heat and add a little vegetable oil.
Take a spoonful of batter and slowly pour it into the pan to create a small pancake. Add more spoonfuls to the pan - you can fry between 4-6 at a time.

When the blinis start to bubble and look dry, use the spoon and the spatula together to turn them over and cook for a further 20 seconds.

Transfer them onto a tray while you cook the next batch and continue in this way until you have used all the batter.

Step 6: Add the topping and serve

To present the bilinis, first spoon a generous helping of sour cream on top of each one. Next, add a small spoonful of caviar and finally top with a sprinkle of chopped chives and they are ready to serve!

You can make the blinis ahead of time and warm them in the oven, and also vary the toppings as you wish - why not try them with smoked salmon and creamed cheese?

    Do it in the evening for the following morning and only once a year, othewise you could get fat. 7g of dry east 500ml of warm milk 6-8 full table spoons of flour (depending on how thin you want your pancakes) 2 eggs 1/2 tea spoon of salt 2-3 table spoons of sugar take 100 ml of warm milk and mix in yeast and 1 tea spoon of sugar. Leave for 10 min. Then mix all the ingredients together (milk, salt, sugar, eggs, yeast mixture, flour) using mixer or blender, abour 7 minutes, could be longer. Cover with...well palstick will do, normally the towel. Leave in a warm place for 2 hours to rise, then put into the fridge for the night. In the morning get the misture out of the fridge and leave to warm up a bit till the room temperature. And then you fry them. Only for the first pancake you put oil and then for each 6th. Take the preheated pan with oil by the handle put the dough in and make such rough movement so the dough spreads evenly all over the pan's base, now put onto the fire and wait till the upper side looks dry, turn and fry. And so on, really boring... But taste amasing with smoked salmon, you definately have to try it. They have to be big and thin. Put the whole eggs, not separate!!!! Leave them to rise for 2 hours and after that over night in the fridge!!!

    This is more like oladiyas, not blinis....blinis are made from a thinner batter, they are paper thin and of a bigger radius....somewhat similar to crepes. Not a big deal, cause both oladiyas and blilis are traditional Russian dishes. You can top oladiya or stuff blinis with various toppings - sweet or spicy. The real delicacy is caviar rolled in blinis.
