Step 1: You will need

  • 2 tbsp olive oil
  • 100 g shallots, chopped
  • 3 cloves of garlic, sliced
  • 120 ml dry white wine
  • 300 ml cream
  • 200 g spinach
  • 80 g blue cheese, roughly chopped
  • the juice of half a lemon
  • 250 g fettuccine
  • some parmesan cheese, shaved
  • 40 g pine nuts, roasted
  • 1 frying pan
  • 1 large saucepan
  • 1 pair of pasta tongs
  • 1 colander

Step 2: Cook the fettuccine

Cook the fettuccine in a large saucepan of boiling water for 7-8 minutes, or until cooked to your liking.

Step 3: Make the sauce

Whilst the pasta is cooking heat the oil in the frying pan over a medium heat. When the oil is hot add the shallots and sauté for a minute, then add the garlic and sauté until tender.

Pour in the wine and simmer, whilst stirring continuously, until reduced by half. Shake the sauce to de-glaze the pan. Then stir in the cream and allow to simmer until the mixture has reduced by one-third.

When the sauce has reduced add the spinach, cheese and lemon juice. Mix together, season with salt and freshly ground black pepper, mix again and remove from the heat. Take the pasta and drain into the colander.

Step 4: Mix the ingredients

Add the pasta into the sauce and use the pasta tongs to mix together.

Step 5: VIDEOJUG TIP

If the sauce is to thick you could add a little boiling water

Step 6: Serve the dish

Use the pasta tongs to serve. Top with shaved parmesan cheese and pine nuts.
