Ever dreamt of being the next Willy Wonka? Now you can with these fantastic homemade blue lollipops! Once you know the basics, you can experiment with all different colours and designs.
Ingredients
- 100 ml water
- 250 g granulated sugar
- 1/2 tsp cream of tartar
- blue food colouring
- oil
Method
Put the sugar, cream of tartar and water into a saucepan. Put it on a high heat and stir until the sugar has melted.
Once the sugar has melted, stop stirring it, place it on a high heat and put your sugar thermometer in it.
Boil until the sugar solution reaches about 290 degrees. When the sugar is ready, it should go hard when you drop a spoonful into water, and you should be able to crack it.
Add a little blue food colouring and mix through, then leave to cool a little.
Brush some oil on greaseproof paper, spoon circles of the sugar onto it, then place your sticks in and twist them to make sure they are fully covered in the sugar.
Store between sheets of greaseproof paper in an air-tight container to stop them sticking together.
