Step : You will need

  • 110 g plain flour
  • 110 g butter
  • 65 g caster sugar
  • 2 eggs
  • 1 ½ tsp baking powder
  • 120 g blueberries
  • pinch nutmeg

Preheat oven to 200C

Cream the butter and sugar together then slowly add the eggs, mix for 3 minutes. Add the flour, baking powder, blueberries, nutmeg, and refrigerate for at least an hour, preferably overnight

Put a spoonful of muffin mixture into each muffin case, filling each to just over half way

Bake in an oven for 20 minutes or until golden on top.

    what a load of rubbish,beating the butter and sugar is totally unecessary, she really overbeated the final mix and the end result was a rock cake type thing which a muffin is just not like! mine rise and are beatifully moist, over filling the muffin case not like her shabby specimines.

    granulated is much larger grains and won't dissolve as well. you can use it, but it'll effect the texture greatly - i.e. they'll be grainy.

    can i not use granulated sugar? iv seen on a another website that it says salt instead of nutmeg..whats the diffrence?

    here is the recipe is US 1 cup of flour (and just abit more, 15 grams more) 1/2 cup of butter (and just abit more, 25 grams) 1/4 cups sugar (and just abit more, 15 grams) 1 1/2 cups blueberries 2 egs 1 1/2 tsp baking powder pinch of nutmeg (1/2 tsp of nutmeg)
