Step 1: You will need…

  • 110 g bread crumbs
  • 1 large onion, peeled
  • 12 to 15 whole cloves
  • 8 black peppercorns
  • 500 ml full-fat milk
  • 50 g butter
  • 2 tbsp double cream
  • salt and pepper
  • 1 knife
  • 1 chopping board
  • 1 medium saucepan
  • 1 bowl
  • 1 sieve
  • 1 wooden spoon

Step 2: Prepare the onion

Place the onion onto the chopping board and cut it in half. Continue by studding each half of the onion with cloves, roughly using six cloves per half.

Step 3: Add onion to the milk

Place both halves of the studded onions into a pan, add the peppercorns and the milk.

Step 4: Boil and infuse

Place the pan of milk and onion on a medium heat and bring to the boil. When boiling, remove from the heat and leave to infuse for 2-3 hours.

Step 5: Strain the milk

Strain the sauce through the sieve into a bowl. You can discard the onion. Pour the sauce back into the pan for further cooking.

Step 6: Add half the butter

Place the pan on a low heat and add half of the butter. Pour in the bread crumbs and stir together. Leave the breadcrumbs to swell for 10-15 minutes, stirring occasionally.

Step 7: Add rest of butter and cream

Add the remaining half of the butter and the cream and stir. Season with salt and black pepper and stir again. Cook for a further minute and remove from the heat.

Step 8: Serve

Spoon the sauce into a sauce boat and serve while warm.

    Why would you discard the onion? That's just wasteful. Use it in a stew or soup or many other ways.

    If you really wish to show off, leave mixture to set in a dariole, or other small metallic portion sized container, looks really impressive

    LOvely receip but I tend to leave the onion infusing with the cloves overnight. A bay leaf also adds to the flavour

    This recipe will taste awful if you put soy anywhere near it, considering this is a sauce for chicken and turkey, I'd leave it alone if you're so finicky you don't eat dairy products, even though they don't kill animals to get produced.

    Nice recipe. For vegetarian version use the soy milk/butter/cream.
