How To Make Broccoli, Leek, Carrot And Potato Cheese
Step 1: Prepare
- 3 medium potatoes, mashed
- 280 ml cheese sauce (see "How To Make White Sauce")
- 1 medium carrot
- 1 medium leek
- 450 g broccoli
Step 2: Cook
Boil the carrots for 12 minutes, fry the leek for 6 minutes and boil the broccoli for 5 minutes. Drain all the veg when it's cooked.
Step 3: Puree
Puree all the vegetables in a food processor, adding the cheese sauce a little at a time. Finally add the mashed potato and whizz briefly. Don't process the mashed potato too much as it will turn gluey. You can always add more cheese sauce to correct the texture if neccessary.
