Ingredients

  • cooking oil
  • 2 potatoes
  • 2 tomatoes
  • 2 carrots
  • kale
  • peas
  • salt
  • pepper
  • eggs

Step 1: Prepare The Ingredients

Boil the potatoes, peas, kale, and carrots. Chop the tomatoes and carrots, and mash the potatoes.

Step 2: Combine The Ingredients Together

Put all of the prepared ingredients into a bowl, including the salt and pepper.

Step 3: Form The Cakes

Use your hands to form small cakes and place them onto a separate plate or tray.

Step 4: Fry The Cakes

Drizzle the frying pan with cooking oil, and then transfer the cakes to the frying pan. Fry them off until each side of the cakes are a golden brown.

Step 5: Bake The Cakes

Transfer the cakes from the frying pan into a baking tray, and place them into an oven set at 180 degrees and for about 15 minutes. While the cakes bake, fry some eggs.

Step 6: Serve The Bubble and Squeak Cakes

Serve the cakes and top them each with a fried egg.
