How To Make Bunny Chow

Paul Mulvenna-Pegrum, the Head-Chef of the George Inn in Old Oxted gives his recipe for bunny chow. This spiced lamb dish originates from Durban, South Africa and consists of a hollowed out loaf of bread filled with curry. The dish is simply bursting with spicy flavour and succulent lamb, a really unique dish.

Ingredients

  • 2 tsp tumeric
  • 1 cinnamon stick
  • 3 tsp cardamom seeds
  • 4 garlic cloves, crushed
  • 2 garam masala
  • 1 curry powder
  • 1 onion, chopped
  • 1 kg lamb
  • 2 potatoes, cubed
  • 1 tin chopped tomatoes
  • 2 un-sliced loaves of bread

Step 1: Make the Curry Base

Add 2 tsp tumeric, 1 cinnamon stick, 3 tsp cardamom seeds, the chopped garlic, 2 tbsp garam masala and 1 tbsp curry powder. Add the lamb, cubed potatoes, onions, chopped tomatoes.

Step 2: Simmer

Allow the dish to simmer until the meat is tender, the potatoes are soft and the vegetables are cooked. Slice a loaf of bread, hollow it out and spoon in a large dollop of the curry sauce. Serve.
