Preheat the oven grill

Set the oven grill to high.

Prepare the roasting tray

Next, spread the rock salt evenly in the roasting tray (this will stabilise the clams as they grill) and set the tray aside.

Open the clams

Using a tea towel, holding a clam in one hand, insert the clam knife into the hinge at the back of the clam and twist to open it. Slide the knife all the way around the shell ensuring that the knife is pointing away from you towards the top shell.

This prevents damage to the meat. Now the baked clams are open, slip the knife under the meat and carefully separate it from the shell.

Try to conserve as much of the juice as possible. Put the clam on the salt in the roasting tray and continue until all 12 are prepared.

Prepare the butter mix

Put the butter, garlic, bacon, green onion, parsley, lemon juice and breadcrumbs into a bowl. Season well with salt and pepper and mix thoroughly.

Put a spoonful of the butter mix on top of each clam.

Grill the clams for approximately 3 minutes at the top of the oven until browned. Then remove.

Scatter the leftover salt over a serving plate and arrange the baked clams on top. Use a spoon to handle the baked clams as the shells will be very hot.
