- 200° c - 390° f
Ingredients
- 280 g plain flour
- 85 g butter, melted
- 1 baking powder
- 1 tsp bicarbonate of soda
- 120 g sugar
- 2 large eggs
- 250 g buttermilk
- 1 tsp vanilla extract
- 1 pinch of salt
Method
Pre-heat your oven to 200 degrees Celsius.
Sift the flour, baking powder and bicarbonate of soda into a bowl, then mix in the sugar and salt. Make a well in the centre of the dry ingredients and set the bowl aside.
Beat the eggs, then whisk in the melted butter, the vanilla extract and the buttermilk.
Pour the wet ingredients into the well you made in the dry ingredients and gently mix everything together. Spoon the mixture into a 6 muffin tin which has been greased and floured.
Bake for about 20-25 minutes. Insert a skewer into one of the muffins; if the skewer comes out clean, the muffins are ready.
