Step 1: You will need
- 1 kg butternut squash, peeled & cubed
- 600 g sugar
- 1 orange, for juice
- 1 lemon, for juice
- 2 cloves
- 200 ml water
- 1 large saucepan
- 1 wooden spoon
- 1 spoon
- 1 glass jar
Step 2: Prepare the marmalade
Heat a large saucepan over a medium heat.
Put the chunks of butternut squash into the saucepan. Add the sugar, orange juice, lemon juice, water, and the cloves.
Bring the marmalade to a boil and then lower the heat and simmer gently, stirring occasionally, until the liquid has evaporated. It will take about forty-five minutes until the squash is totally cooked.
Step 3: Remove the cloves
Remove the cloves and stir vigorously to break up the squash. Now take the pan off the heat.
Step 4: Bottle the marmalade
Transfer the marmalade to a clean glass jar while it is still hot. It will last for several months if stored properly.
