This video shows you how to make a quick and easy Cajun spice which may be used either in a main dish like chicken or in a side dish like potato wedges. The recipe is versatile, economical and delicious.
So, we're going to do a cayenne or Cajun spice now. I've got eight different components to that. The first thing I'm going to add is some salt.
You can put white pepper in, but I'm just going to add black for the time being. I've got a bit of paprika, so that can now go in. Obviously, the big one is chilli.
I'm not going to put that much in, because I do find with chilli a lot, a little goes a long way. Always good to give that a nice little mix. I've got some mustard powder so that, that goes in as well.
I've also got some cloves and a little bit of garlic powder. And I find that the thing that really gets it going is the cayenne pepper. Give that a good old mix, and then I'll just empty that all into a jar.
I haven't made a great deal, it's just for demonstration here, but you can make jars full of this stuff and it works as a beautiful seasoning. Obviously, the classic thing that you might do is a Cajun chicken where you would just rub the fillets with the spice, maybe just pan fry them in a little bit of butter. If you've got one of those frying pans with the stainless steel handle, the whole lot goes in the oven.
Another one which I always like doing is potato wedges. If you just cut the potato into wedges in a bowl with some olive oil, throw a bit of this spice in, give it a good old mix and shove it in the oven on say, I don't know, 160 degrees, something like that, for about an hour and a half, you end up with - dip those in some sour cream - it's absolutely delicious. .
