Step 1: You will need

  • 12 canapé tartlets, ready made
  • 1 chicken breast, cooked and diced
  • 1 tbsp mayonnaise
  • 1 tbsp parsley, chopped
  • 1/2 tbsp mint, chopped
  • 2 tbsp celery, finely diced
  • 1/2 tsp curry powder
  • 4 artichoke hearts, cut in half
  • 50 g goats cheese, sliced
  • 1 clove of garlic, sliced
  • 2 tbsp dates, diced
  • 1 tbsp olive oil
  • 3 tbsp mozzarella, diced
  • 2 tbsp sun dried tomatoes, chopped
  • 1 tbsp basil, chopped
  • 1 tbsp olive oil
  • Salt and pepper
  • few sprigs of fresh thyme
  • 3 spoons
  • 1 small frying pan
  • 2 bowls

Step 2: Make the chicken tartlets

Spoon the diced chicken into a bowl, then add the mayonnaise, chopped parsley, chopped mint, diced celery and curry powder. Season with freshly ground salt and pepper and using a spoon mix it all together.

Step 3: Finish chicken tartlets

Place four of the canapé tartlets onto a chopping board and spoon the chicken filling into each of the tartlets. Set the tartlets aside while you make the other fillings.

Step 4: Make the artichoke, garlic and date tartlets

Place a frying pan on a medium-high heat and add the olive oil. Allow to heat up for a few seconds, then place the artichokes face down into the hot oil for 2-3 minutes in order to brown the bottom.

Now turn the artichokes over to brown the other sides for a few minutes, then add the garlic and stir. Add the dates, stir again and then remove from the heat.

Step 5: Finish the tartlets

Take four more of the canapé tartlets and add one piece of goats cheese into each. Then spoon over the fried artichoke mixture and finally garnish with a sprig of thyme.

Step 6: Make the mozzarella and sun dried tomato tartlets

To make the third filling, spoon the mozzarella into a bowl. Then add the sun dried tomatoes, basil and olive oil. Season with salt and pepper, then combine the ingredients together with your spoon.

Spoon the mixture into each of the four remaining canapés and garnish with a sprig of thyme.

Step 7: Serve
