How To Make Cannelloni With Ham & Tomato Sauce

Step 1: You will need
- 250 g ricotta cheese
- 10 g freshly grated parmesan cheese
- 1 tbsp fresh parsley
- ½ tbsp chopped oregano
- 1 medium egg, lightly beaten
- salt and pepper
- 4 lasagne sheets
- 1 tbsp olive oil
- 4 medium slices of prosciutto ham
- 25 g melted butter
- ice cubes
- for the tomato sauce:
- 30 ml olive oil
- 2 medium cloves of garlic, sliced
- salt and pepper
- 250 g tomatoes, peeled, chopped and seedless
- 1 tbsp basil, chopped
- parmesan cheese
- 1 mixing bowl
- 1 spoon
- 1 saucepan
- 1 bowl
- 1 tea towel
- 1 pastry brush
- 1 ovenproof dish
- 1 small saucepan
Step 2: Preheat the oven
Set the oven temperature to 200ºC (gas mark 6/400ºF)
Step 3: Make the filling
Put the ricotta, the parmesan cheese, oregano, chopped parsley and egg into the mixing bowl. Season with salt and pepper and mix together.
Step 4: Prepare lasagne sheets
Add two lasagne sheets at a time to a large pan of salted boiling water. Cook for 4 minutes. While it is cooking, half fill the bowl with water, and add the olive oil and ice cubes.
When the lasagne has cooked for 4 minutes, remove it from the pan and place into the iced water. Leave it to cool for 2 minutes, then remove and place onto the tea towel. Pat dry and place on a plate.
Step 5: Make the cannelloni
Brush the ovenproof dish with melted butter and put it to one side ready for the cannelloni. Place a slice of the ham onto a sheet of lasagne, put two tablespoons of the ricotta filling at one end, and carefully roll the lasagne into a tube.
Put the cannelloni into the ovenproof dish and brush with melted butter.
Step 6: Cook the cannelloni
Place the dish in the oven and cook for 25 minutes.
Step 7: Make the sauce
While the cannelloni is cooking, place the saucepan on a medium heat and add the olive oil. When hot, add the garlic and cook for 10 seconds, then add the tomatoes. Stir together and cook for 1 minute.
Season with salt and pepper and stir. Cook for a further 10 minutes then remove from the heat.
Step 8: Serve and garnish
Remove the cannelloni from the oven and place 2 on a plate. Top with some of the tomato sauce, grate over a little parmesan and garnish with chopped basil. The dish is now ready to serve.
