  • Butter
  • Brown Sugar

Hi, I'm Matt Kemp from the Underground Cookery School. I'm going to show you how to make a series of sauces. Hope you enjoy.

Hi, Cookery lovers. Today, I'm going to show you how to make the perfect caramel sauce. The first thing I'm going to do is I'm going to mix the ingredients together in this bowl, just to make things easier.

I'm going to put half the cream in. I'm going to put some brown sugar. In that goes.

I'm also going to put some melted butter in. In that goes. Just give it a really good old mix.

Then I'm just going to add all of those ingredients into my pan. Now, what's going to happen is, over the next minute and a half to two minutes, all that lovely brown sugar is going to caramelize whilst the butter starts to melt. I'm going to put the rest of the cream in now.

We're just going to cook that down until we get the desired consistency. Now, with a pan of this sort of size, I mean, this sauce will probably be cooked through in the next couple of minutes. So, whilst that's cooking down, we can discuss a couple of ways in which you may use a caramel sauce.

I think that it goes as a very nice garnish with a sticky toffee pudding. Whenever you add a sauce to a dish, you've always got to think, "Why am I doing this? Is it going to add anything to it?" If you have a cheesecake for example, if you have a nice little squiggly pattern underneath, I think a caramel sauce is really going to add to that flavor. There are a couple of examples.

I think it's also quite nice to have that lovely caramel flavor whisked into an ice cream. Give it a really nice caramelized toffee flavor. I've just left that cooking down until I've got both the consistency and the color that I want.

Now, I'm just going to put it on this dish, because it's going to give you an idea of the consistency that I think that you should be aiming for, but also the color. If you just have a look at that; there you have the perfect caramel sauce. .
