Step 1: Preheat the oven

  • 180 g self raising flour
  • 350 g caster sugar
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 3 eggs
  • 220 g grated raw carrot
  • ¼ tsp salt
  • 300 ml sunflower oil
  • for the frosting:
  • 180 g cream cheese
  • 180 g melted butter
  • 220 g icing sugar
  • ½ tsp vanilla essence

Step 2: Combine the dry ingredients

Sieve together 175g self-raising flour, 1 teaspoon baking powder, 1 teaspoon cinnamon and 1/4 teaspoon salt.

Step 3: Mixture

Put 300ml oil in a large bowl and beat with 350g the sugar. Beat in 3 eggs one at a time, then fold in the dry ingredients and stir in 225g grated carrot.

Step 4: Bake

Place the mixture in the tin, level off the top, and bake for 45 mins. Then turn the oven down to 170C/325F/gas 3 for a further 20 mins. When it's done, take the cake out of the oven and cool in the tin for 5 mins. Then remove from the tin to cool on a wire rack.

Step 5: Icing

While the cake is cooling, beat together the 175g cream cheese and 175g butter and add 1/2 teaspoon vanilla essence. Gradually add 225g sieved icing sugar until the mixture is stiff but spreadable.

Step 6: Finish

When the cake is cool, split it in half horizontally and use the icing to sandwich it back together and cover the top.

    This recipe is a disaster! I have been making carrot cakes for years and have never had a problem, they have always been fabulous. I am away from home and didn't have my recipe with me, thought I would try this one as it looked similar. NOT! As has been said by others there is far too much sugar and oil in this recipe, or not enough flour. I foillowed the ingredients and directions to the letter, the batter didn't look thick enough but I thought it must just be different ingredients over here. It took over 20 minutes longer to cook, there was a sugary crust on the top and the cake itself was very wet. |It doesn't look very appetizing at all. I will never make it agaain and would warn others to find a better recipe.

    I made this cake over the weekend and added a handful of walnuts and some drained mashed pineapple and a handful of sultanas. It was the best cake I have ever made so thankyou for the recipe!

    My cake is baking now! Hope it comes out good. It's for my college bake sale (lol) and I'm hoping for it to be a big hit! When I mixed all the ingredients together it looked wrong but then I looked at the video and it was meant to be that way! So I hope it comes out good!

    Take heed of the previous comments. This cake had way too much oil in it and then the middle did not cook. When the cake was finally done the middle sank (we do have a fan assisted oven). The icing then came out bright yellow when carrot cake topping should be a more white/cream colour. All in all, definitely not a success.

    Cake was moist but took a lot longer to cook as I don't have a fan assisted oven and as for the topping better than angel delight. thanks 10/10

    Cake was crispy on the top and the oil was too much.`but `i will try the rest of the recipes first

    The frosting is good. Cake is not so good. Too much sugar (crispy on top) and only about 2 iches deep!. Took 1hr 20 mins to cook. Very oily the next day, I will not be using this recipe again.
