Ingredients
- olive oil
- 1/2 onion, diced
- 10 g ginger
- 2 carrots, diced
- 1 garlic clove, chopped
- 1/2 leek, chopped
- 450 ml vegetable stock
- single cream
Step 1: Cook The Vegetables
Heat some olive oil in a pot, the add 1/2 diced white onion, 10g of ginger, 1/2 chopped leek, and 2 diced carrots. Stir and cook for 3-4 minutes.
Step 2: Adding Garlic
Add garlic to the pot and mix well, then add 450ml of vegetable stock. Simmer for 25 to 30 minutes. When the vegetables are soft, put everything into a blender and blend until smooth.
Step 3: Serve
Return the liquidised soup to the pot, check the seasoning, and serve with a drizzle of cream over each bowl.
