How To Make Carrots With Cumin And Lemon

Step : You will need…
- 450 g carrots, peeled
- 150 ml vegetable stock
- ½ tsp cumin seeds, toasted
- ½ lemon, grated zest and juice
- ½ tsp caster sugar
- 1 tbsp chopped coriander
- salt and black pepper
- 1 sharp vegetable knife
- 1 chopping board
- 1 large saucepan and lid
- 1 wooden spoon
Step 1: Prepare the carrots
Slice the carrots in half lengthways, then crossways into pieces about 2.5cm wide. Put into a saucepan with the stock and add the toasted cumin.
Step 2: Add lemon and cook
Add the lemon zest and juice, sugar and pinch of salt. Bring the carrots to the boil, then simmer, covered, for 10 to 15 minutes, until the carrots are tender but still a little crunchy.
Use a sharp knife to test if the carrots are cooked.
Step 3: Season and serve
Season the carrots with freshly ground black pepper, add the chopped coriander and the butter. Stir and serve immediately.
