Step 1: You will need

  • 1 cauliflower, broken into florets
  • 30 g grated cheddar
  • 30 g grated parmesan
  • 450 ml milk
  • 40 g flour
  • 40 g butter
  • 1 tsp Dijon mustard
  • 1 pinch of nutmeg
  • salt and pepper
  • 2 saucepans
  • 1 slotted spoon
  • 1 wooden spoon
  • 1 spoon
  • 1 baking dish
  • 1 whisk

Step 2: Set the oven to grill

Before you begin cooking, placing your oven on its grill setting.

Step 3: Cook the cauliflower

Next, bring a pot full of water to a boil and season it with a little salt. Place the cauliflower into the water and bring it to a boil once more. Allow to cook, which should take about 5-7 minutes.

Test the cauliflower with a small knife, just as our chef is demonstrating now. It should enter the floret without resistance. Remove the pieces from the water and set aside on a tray.

Step 4: Make the sauce

Next, place the saucepan over a medium heat. Add the butter and let it melt, giving it a little help by stirring. When melted, add the flour and blend the mixture until you get a smooth paste.

You can now add the milk, whisking it occasionally until the sauce begins to thicken. When it does begin to thicken, add the nutmeg, season with a little salt and pepper, and continue to whisk.

The moment when the sauce takes on a loose but thick consistency, remove it from the heat. Now, add one-half of the parmesan cheese. The final special touch of seasoning is the Dijon mustard, just to liven up the sauce's flavour.

If you want to save a little time, heat the milk up a little beforehand.

Step 5: Assemble

Place the florets in an oven-proof dish and season them with a little bit of salt. Now spoon over generous amounts of the cheese sauce and sprinkle with the remaining parmesan cheese.

Step 6: Grill and serve

Place under the grill for five or so minutes, checking to make sure that its surface does not burn. Remove and serve the cauliflower cheese immediately from the oven-proof dish. You can experiment with a myriad of different cheeses and see which ones are your favourites.
