How To Make Celeriac Purée

Step 1: Prepare the celeriac
- 1 small celeriac, peeled and cubed
- 50 g butter
- 400 ml milk
- 1 tbsp honey
- salt & pepper
- 1 saucepan
- 1 wooden spoon
- 1 slotted spoon
- 1 blender
Step 2: Cook the celeriac
Sweat the celeriac for 4 to 5 minutes, stirring often to prevent it from browning or sticking.
Step 3: Add the milk
Pour the milk into the saucepan and bring it to the boil. Lower the heat and simmer for about 20 minutes, until the celeriac is very soft.
Step 4: Blend the celeriac
Remove the celeriac with a slotted spoon and put it into the blender. Add a tablespoon of honey and salt. Blend until smooth and add some of the cooking liquid to loosen the consistency, if needed.
Step 5: Season & serve
Taste and season with salt and pepper as you desire and serve.
