How To Make Celeriac Remoulade

Step 1: Cut the celeriac into matchsticks
- for the mayonnaise:
- 2 egg yolks
- 3 tsp lemon juice
- 1 tsp dijon mustard
- 300 ml vegetable oil
- salt and freshly ground black pepper
- for the remoulade:
- ½ a celeriac, peeled
- 1 tbsp soy sauce
- 1 tbsp flat-leaf parsley, chopped
- 1 chopping board
- 1 knife
- 2 bowls
- 1 whisk
Step 2: Make the mayonnaise
Place egg yolk, mustard, and lemon juice in a bowl and slowly whisk in the oil. Season with pepper and salt, to taste.
Step 3: Make the remoulade
In another bowl, mix the celeriac, soy sauce, parsley and mayonnaise. Season to taste and serve.
