How To Make Chakin Sushi

Sushi doesn't have to come wrapped in seaweed. In this video Japanese chef Atsuko Ikeda shows you how to make tasty chakin sushi, which is served in an egg sheet parcel and can be garnished with your favourite toppings.

  • 450 g prepared sushi rice
  • 2 eggs
  • 1 tsp mirin
  • 1 tsp caster sugar
  • 1/2 cucumber
  • 2 tbsp white sesame seeds
  • 2 boiled prawns
  • 8 carrot slices
  • 8 corn slices
  • 8 coriander stalks
  • salt

Step 1: Make The Egg Sheet

Crack two eggs into a bowl and season with mirin, sugar and a pinch of salt. Mix the ingredients until the salt and sugar are dissolved. Soak a paper towel with oil and using chop sticks, rub the paper over the bottom of your heated frying pan until it is well covered. Once your pan is hot pour a quarter of your egg mixture into the pan. When the edges of the egg start to harden, loosen the egg from the pan and turn the sheet over carefully. Take the pan off the heat immediately and leave the egg sheet to cook in the pan.

Step 2: Prepare The Rice

In a large bowl thinly slice half a cucumber. Sprinkle salt over the cucumber to wilt it and leave for a couple of minutes. Once the cucumber has wilted squeeze the slices to release excess water and then drain the liquid. Take 450g of prepared sushi rice and place it into the bowl with the cucumber. Pour in your sesame seeds and mix everything together until well combined.

Step 3: Make The Chakin Sushi

Take a medium size ball of the mixed sushi rice and place in the centre of your cooled egg sheet. To create your parcel take the front half of the egg sheet and fold it over the rice. Next fold both sides in to cover the rice. To finish the parcel tuck the final side of the egg sheet underneath the rice so the joins cannot be seen.

Step 4: Decorate The Parcel

To garnish the parcel take a coriander stalk and place the parcel on top in the centre. Take a slice of boiled prawn and a slice of corn and place on top. To add an extra touch to your carrot slices use a small cutter to cut out an animal or flower shape. Gently tie the coriander stalk around the parcel.
